Bottom of the Fridge Bargees*

*out of respect for the original great Bhaji the name has been changed!

For the batter you’ll need 100g of gram flour, 1/2 tsp of baking powder, a pick of salt, 1 tsp cumin powder and 1 tsp ground turmeric plus as much of a smidge of chilli powder as you’d like OR 2 tsps of curry powder. You’ll also need about 100ml water.

Grate 2 onions or chop as finely as you can and leave to one side. Do the same with whatever veg needs using up… here we’ve used a courgette and carrot.
Feel free to add ant fresh herbs that need using too. Sprinkle with salt to draw out as much liquid as you can.

Make the batter by mixing the dry ingredients and then gradually adding the water until it’s a decently thick batter. Then squeeze the moisture out fomr the vegetables and add them to the batter.

Fry spoonfuls until brown on each side. Can be eaten hot or cold with salad, pickle, yoghurt. Will store for about 5 days in the fridge but don’t expect them to last that long!
